- 2 boneless chicken breasts or thighs
- 1 cup rice (white or jasmine)
- 2 eggs
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1/2 cup fresh herbs (basil and cilantro)
- 2 tablespoons soy sauce or tamari
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine rice with vegetable broth and a pinch of salt. Bring to simmer and cook according to package instructions, about 15 minutes for white rice.
- While the rice is cooking, heat a non-stick skillet over medium heat, add olive oil and sauté garlic for about 1 minute.
- Add chicken to the skillet, season with salt and pepper, and cook for 5-6 minutes until golden and cooked through.
- In another saucepan, bring water to a gentle boil. Simmer eggs for 6-7 minutes for soft-boiled texture, then transfer to an ice bath.
- Fluff the rice once cooked and serve in bowls, topping with sautéed chicken, fresh herbs, and halved soft-boiled eggs. Drizzle with soy sauce before serving.
Notes
You can substitute chicken for tofu for a vegetarian version or use quinoa instead of rice. Customize with leftover vegetables like bell peppers or mushrooms.
