Ingredients

  • Tortillas (corn or flour)
  • 4 large eggs
  • 1 cup mushrooms (button, cremini, or shiitake)
  • 2 cloves garlic, minced
  • 1/2 cup shredded cheese (cheddar or pepper jack)
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Gather all your ingredients and chop mushrooms and garlic.
  2. Place a non-stick skillet over medium heat and add a drizzle of olive oil.
  3. Toss in the mushrooms and garlic, cooking until golden brown (about 2 minutes).
  4. Whisk eggs with salt and pepper, pour over mushrooms, and stir gently until just set (about 1 minute).
  5. Warm tortillas in another skillet or microwave.
  6. Layer scrambled egg mixture onto tortillas, adding cheese, avocado, and cilantro. Fold and enjoy!
