Ingredients

- Tortillas (corn or flour)
- 4 large eggs
- 1 cup mushrooms (button, cremini, or shiitake)
- 2 cloves garlic, minced
- 1/2 cup shredded cheese (cheddar or pepper jack)
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
Instructions
- Gather all your ingredients and chop mushrooms and garlic.
- Place a non-stick skillet over medium heat and add a drizzle of olive oil.
- Toss in the mushrooms and garlic, cooking until golden brown (about 2 minutes).
- Whisk eggs with salt and pepper, pour over mushrooms, and stir gently until just set (about 1 minute).
- Warm tortillas in another skillet or microwave.
- Layer scrambled egg mixture onto tortillas, adding cheese, avocado, and cilantro. Fold and enjoy!

For extra flavor, add a splash of hot sauce or a drizzle of sour cream.
