Description

Delicious and fluffy blueberry donuts made effortlessly in an air fryer, perfect for breakfast or a sweet treat.


Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup milk (dairy or non-dairy)
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs and mix in the milk and vanilla extract. Pour the wet ingredients into the dry mixture and stir until just combined.
  3. Gently fold in the blueberries.
  4. Preheat the air fryer to 350°F (175°C) for a few minutes.
  5. Lightly grease donut molds and scoop the batter into the molds, filling them about 3/4 full.
  6. Place the molds in the air fryer basket and cook for 8-10 minutes, or until golden brown and a toothpick comes out clean.
  7. Allow them to cool slightly before transferring them to a wire rack. Dust with powdered sugar or drizzle with glaze if desired.

Notes

For a healthier option, substitute with whole wheat or gluten-free flour. You can replace eggs with flaxseed meal mixed with water for a vegan version.
