  • 1 cup heavy cream or dairy alternative
  • 2 sprigs fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  2. Add the mushrooms, cooking until they release their moisture and turn golden brown.
  3. Incorporate the diced carrots, celery, and potatoes; cook for another 5 minutes until they start to soften.
  4. Pour in the broth, bringing it to a gentle boil, then lower to a simmer.
  5. Season with salt and pepper, and add thyme. Let simmer for 20-30 minutes.
  6. Five minutes before serving, stir in the cream or dairy alternative.
  7. Garnish with fresh parsley and serve.
