Description

A comforting and wholesome chicken soup infused with anti-inflammatory ingredients that nourish the spirit and body.


Ingredients

  • 1 lb boneless chicken thighs or breasts
  • 1 can coconut milk
  • 3 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 large onion, diced
  • 4 cups chicken or vegetable broth
  • 8 oz cremini or shiitake mushrooms, sliced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup fresh spinach
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp turmeric powder
  • Salt and pepper to taste

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add the diced onions, garlic, and ginger. Sauté until fragrant and the onions are translucent, about 3-4 minutes.
  2. Stir in the diced carrots and celery, cooking for another 5 minutes.
  3. Add the chicken pieces, stir to coat, and cook for 5 minutes until the chicken just begins to brown.
  4. Pour in the broth, then add the mushrooms and spices. Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until the chicken is thoroughly cooked.
  5. Remove the chicken and shred it with two forks, returning it to the pot.
  6. Stir in the coconut milk and fresh spinach, and heat through for another 5 minutes.
  7. Taste for seasoning and garnish with freshly chopped herbs before serving.

Notes

Feel free to substitute chicken with chickpeas for a vegetarian option, and alter the vegetables as desired.
