Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the unsalted butter, brown sugar, and granulated sugar until light and fluffy (3-4 minutes).
  3. Beat in the egg and fresh apple cider until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Drop rounded balls of dough onto a parchment-lined baking sheet, leaving space for spreading.
  8. Bake for 12-15 minutes or until edges are lightly golden and centers are slightly underbaked.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
