- 2 cups all-purpose flour
- 1 cup apple cider
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 pint vanilla ice cream
- Crushed graham crackers (for rolling, optional)
- Caramel sauce (for drizzling, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease your donut pan.
- In a mixing bowl, combine flour, baking powder, cinnamon, nutmeg, and sugars. Mix well.
- Pour in the apple cider and mix until well blended. Add the eggs and mix until smooth.
- Spoon the batter into the donut pan, filling each cavity about halfway.
- Bake for 10-12 minutes or until golden brown and a toothpick comes out clean.
- Allow cooling for a few minutes before transferring to a cooling rack.
- Once cooled, scoop generous portions of vanilla ice cream onto the flat side of one donut.
- Place another donut on top, pressing gently to blend the flavors.
- Roll the edges in crushed graham crackers or drizzle with caramel.
- Freeze sandwiches for about an hour before serving.
Notes
For gluten-free, substitute all-purpose flour with gluten-free flour. Consider using flax eggs for an egg-free version. Experiment with different ice cream flavors for a unique twist.
