  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 pint vanilla ice cream
  • Crushed graham crackers (for rolling, optional)
  • Caramel sauce (for drizzling, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. In a mixing bowl, combine flour, baking powder, cinnamon, nutmeg, and sugars. Mix well.
  3. Pour in the apple cider and mix until well blended. Add the eggs and mix until smooth.
  4. Spoon the batter into the donut pan, filling each cavity about halfway.
  5. Bake for 10-12 minutes or until golden brown and a toothpick comes out clean.
  6. Allow cooling for a few minutes before transferring to a cooling rack.
  7. Once cooled, scoop generous portions of vanilla ice cream onto the flat side of one donut.
  8. Place another donut on top, pressing gently to blend the flavors.
  9. Roll the edges in crushed graham crackers or drizzle with caramel.
  10. Freeze sandwiches for about an hour before serving.
