Description

Delightful whoopie pies filled with a creamy mascarpone and spiced apple cider flavor, perfect for autumn gatherings.


Ingredients

  • 1 cup fresh apple cider
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • For the filling: 8 oz mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and cloves in a bowl.
  3. Cream the butter and sugars together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the apple cider and vanilla until smooth.
  5. Gradually fold the dry ingredients into the wet mixture without over-mixing.
  6. Drop tablespoon-sized mounds of dough onto prepared baking sheets, leaving space for spreading.
  7. Bake for 12-15 minutes until edges are golden. Allow cooling for a few minutes before transferring to a wire rack.
  8. For the filling, whip mascarpone cheese with powdered sugar and vanilla until smooth.
  9. Once cooled, fill half the cookies with the mascarpone filling and top with another to create sandwiches.
  10. Dust with powdered sugar if desired and serve fresh.
