Ingredients

  • 2 cups apples (Granny Smith or Honeycrisp), peeled and chopped
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup butter (or coconut oil), melted
  • 1 egg
  • 1 tsp baking powder
  • Optional add-ins: nuts (walnuts or pecans) or raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a square baking pan with parchment paper.
  2. Prepare the apples: Peel and chop your apples into small, bite-sized pieces. Toss them with a touch of lemon juice and cinnamon and set aside.
  3. In a mixing bowl, combine your oats, flour, brown sugar, baking powder, and salt. Mix them well to ensure even distribution.
  4. In a separate bowl, melt your butter and allow it to cool slightly. Then, whisk in the egg and any vanilla extract if you’re using it.
  5. Combine the wet and dry ingredients, stirring carefully until just mixed.
  6. Fold in the prepared apples, making sure they’re evenly distributed throughout the mixture.
  7. Transfer the mixture into the prepared baking pan, smoothing it out into an even layer.
  8. Bake for 25-30 minutes or until the edges turn golden brown and a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for about 10 minutes, then lift it out to cool completely on a wire rack. Slice into squares and enjoy!

Notes

For a crisp top, consider broiling for a minute after baking. Allow bars to cool completely before slicing.
