- 2 cups apples (Granny Smith or Honeycrisp), peeled and chopped
- 1 1/2 cups rolled oats
- 1 cup all-purpose flour (or whole wheat flour)
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup butter (or coconut oil), melted
- 1 egg
- 1 tsp baking powder
- Optional add-ins: nuts (walnuts or pecans) or raisins
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a square baking pan with parchment paper.
- Prepare the apples: Peel and chop your apples into small, bite-sized pieces. Toss them with a touch of lemon juice and cinnamon and set aside.
- In a mixing bowl, combine your oats, flour, brown sugar, baking powder, and salt. Mix them well to ensure even distribution.
- In a separate bowl, melt your butter and allow it to cool slightly. Then, whisk in the egg and any vanilla extract if you’re using it.
- Combine the wet and dry ingredients, stirring carefully until just mixed.
- Fold in the prepared apples, making sure they’re evenly distributed throughout the mixture.
- Transfer the mixture into the prepared baking pan, smoothing it out into an even layer.
- Bake for 25-30 minutes or until the edges turn golden brown and a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes, then lift it out to cool completely on a wire rack. Slice into squares and enjoy!
Notes
For a crisp top, consider broiling for a minute after baking. Allow bars to cool completely before slicing.
