Description

A vibrant salad combining fresh kale, crisp apples, tart cranberries, and crispy bacon, dressed with a light apple cider vinaigrette.


Ingredients

Scale
  • 1 bunch of kale, chopped
  • 2 Honeycrisp or Fuji apples, diced
  • 1 cup dried cranberries
  • 46 slices of bacon, cooked until crispy
  • 1/2 cup chopped walnuts or pecans (optional)
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the kale, remove the tough stems, and chop into bite-sized pieces. Massage with olive oil and salt.
  2. Cook bacon in a skillet over medium heat until crispy, then drain on paper towels.
  3. In a large bowl, combine kale, diced apples, dried cranberries, and crumbled bacon. Add nuts if using.
  4. Whisk together apple cider vinegar, olive oil, honey, and season with salt and pepper in a small bowl.
  5. Pour the vinaigrette over the salad and toss gently to combine.
  6. Serve immediately as a side dish or add grilled chicken or chickpeas for a light main course.

Notes

This salad is best served at room temperature. For meal prep, keep the dressing separate until serving to avoid soggy kale.
