Description
A vibrant salad combining fresh kale, crisp apples, tart cranberries, and crispy bacon, dressed with a light apple cider vinaigrette.
Ingredients

- 1 bunch of kale, chopped
- 2 Honeycrisp or Fuji apples, diced
- 1 cup dried cranberries
- 4–6 slices of bacon, cooked until crispy
- 1/2 cup chopped walnuts or pecans (optional)
- 3 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Wash and dry the kale, remove the tough stems, and chop into bite-sized pieces. Massage with olive oil and salt.
- Cook bacon in a skillet over medium heat until crispy, then drain on paper towels.
- In a large bowl, combine kale, diced apples, dried cranberries, and crumbled bacon. Add nuts if using.
- Whisk together apple cider vinegar, olive oil, honey, and season with salt and pepper in a small bowl.
- Pour the vinaigrette over the salad and toss gently to combine.
- Serve immediately as a side dish or add grilled chicken or chickpeas for a light main course.
Notes
This salad is best served at room temperature. For meal prep, keep the dressing separate until serving to avoid soggy kale.
