Ingredients

  • 4 cups fresh kale, torn into bite-sized pieces
  • 2 crisp apples, diced (Honeycrisp or Fuji)
  • 4 strips thick-cut bacon, cooked and crumbled
  • 1 cup dried cranberries
  • 1/2 cup toasted pecans or walnuts
  • 1/2 cup crumbled feta or goat cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Rinse the kale under cold water and pat dry. Remove tough stems and tear leaves into bite-sized pieces.
  2. In a skillet over medium heat, cook the bacon until crispy. Reserve a bit of bacon grease and drain the bacon on a paper towel.
  3. In a bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper for the dressing.
  4. In a large bowl, combine kale, chopped apples, dried cranberries, and toasted nuts. Drizzle with dressing and toss gently.
  5. Crumble the crispy bacon and cheese over the top and give one final light toss.
  6. Serve immediately or let it sit for about 15-20 minutes to meld flavors.
