Ingredients

- 4 cups fresh kale, torn into bite-sized pieces
- 2 crisp apples, diced (Honeycrisp or Fuji)
- 4 strips thick-cut bacon, cooked and crumbled
- 1 cup dried cranberries
- 1/2 cup toasted pecans or walnuts
- 1/2 cup crumbled feta or goat cheese (optional)
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Rinse the kale under cold water and pat dry. Remove tough stems and tear leaves into bite-sized pieces.
- In a skillet over medium heat, cook the bacon until crispy. Reserve a bit of bacon grease and drain the bacon on a paper towel.
- In a bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper for the dressing.
- In a large bowl, combine kale, chopped apples, dried cranberries, and toasted nuts. Drizzle with dressing and toss gently.
- Crumble the crispy bacon and cheese over the top and give one final light toss.
- Serve immediately or let it sit for about 15-20 minutes to meld flavors.

Massage the kale gently before adding the dressing to soften its texture. Letting the salad sit before serving helps the flavors meld.
