Delicious mini cheesecakes with a buttery graham cracker crust, creamy filling, and topped with spiced apples.

- 1 ½ cups graham crackers, crushed
- ½ cup butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 2–3 medium apples, peeled and sliced (Granny Smith or Honeycrisp)
- Optional: caramel sauce for drizzling
Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
- In a bowl, crush the graham crackers and mix with melted butter. Press into muffin cups and bake for 10 minutes.
- In a large bowl, beat cream cheese until smooth, then add sugar and eggs one at a time until mixed. Stir in vanilla, cinnamon, and nutmeg.
- Prepare apples by slicing and sprinkling with cinnamon and sugar.
- Pour cheesecake batter over crusts, add sliced apples, and push down slightly.
- Bake for 20-25 minutes until edges are set; let cool for 10 minutes before transferring to a wire rack.
- Chill in the fridge for a few hours or overnight.
- Serve with caramel sauce or whipped cream if desired.
Notes
Allow cheesecakes to cool properly to prevent cracks. Adjust baking time carefully.
