Description

Delicious mini cheesecakes with a buttery graham cracker crust, creamy filling, and topped with spiced apples.


Ingredients

  • 1 ½ cups graham crackers, crushed
  • ½ cup butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 23 medium apples, peeled and sliced (Granny Smith or Honeycrisp)
  • Optional: caramel sauce for drizzling

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, crush the graham crackers and mix with melted butter. Press into muffin cups and bake for 10 minutes.
  3. In a large bowl, beat cream cheese until smooth, then add sugar and eggs one at a time until mixed. Stir in vanilla, cinnamon, and nutmeg.
  4. Prepare apples by slicing and sprinkling with cinnamon and sugar.
  5. Pour cheesecake batter over crusts, add sliced apples, and push down slightly.
  6. Bake for 20-25 minutes until edges are set; let cool for 10 minutes before transferring to a wire rack.
  7. Chill in the fridge for a few hours or overnight.
  8. Serve with caramel sauce or whipped cream if desired.

Notes

Allow cheesecakes to cool properly to prevent cracks. Adjust baking time carefully.
