- 1 ½ cups all-purpose flour
- 2 tablespoons baking powder
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 cup whole milk (or almond milk)
- 2 large eggs
- 1 cup Granny Smith apples, chopped
- 1 teaspoon vanilla extract
- Maple syrup, for serving
Instructions
- In a large bowl, whisk together flour, baking powder, brown sugar, cinnamon, and nutmeg.
- In another bowl, beat the eggs and mix in the milk and vanilla extract.
- Chop the Granny Smith apples into small chunks and mix into the wet ingredients.
- Pour the wet mixture into the dry ingredients, folding gently until no flour streaks are visible.
- Preheat a skillet over medium heat and lightly grease it with butter or cooking spray.
- Pour a ladle of batter onto the skillet and cook until bubbles form, about 2-3 minutes.
- Flip and cook the other side for an additional 1-2 minutes, until golden brown.
- Serve warm, drizzled generously with vanilla maple syrup and garnished with apple slices.
Notes
Consider adding nuts or raisins for extra flavor. Keep pancakes warm in the oven while cooking rest of the batch.
