Ingredients

- 3 Apples (Honeycrisp, Granny Smith, or Gala)
- 4 cups Baby spinach or fresh arugula
- 1 cup Toasted walnuts or pecans
- ½ cup Crumbled feta or goat cheese
- ¼ cup Olive oil
- 2 tbsp Fresh lemon juice
- 1 tbsp Honey
- Salt and pepper to taste
- Optional: Dried cranberries, sunflower seeds, fresh mint or basil
Instructions
- Prepare the Ingredients: Wash and dry apples, core and slice them into thin wedges.
- Set Up the Greens: In a large bowl, lay down a bed of greens.
- Mix in the Apples and Nuts: Toss sliced apples over the greens and sprinkle nuts on top.
- Add Cheese: Crumble cheese over the salad evenly.
- Whisk the Dressing: In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper.
- Dress the Salad: Drizzle dressing over the salad just before serving and toss gently.
