Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup gochujang
  • 2 tablespoons honey
  • 3 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • Salt and black pepper, to taste
  • 1 tablespoon vegetable oil
  • Sliced green onions or sesame seeds, for garnish

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. In a medium bowl, whisk together gochujang, honey, soy sauce, garlic, and ginger until smooth.
  3. Pat the chicken thighs dry and season with salt and black pepper.
  4. Heat a large, oven-safe skillet over medium-high heat with vegetable oil.
  5. Place the chicken skin-side down in the skillet for 5–7 minutes until golden brown, then flip and sear for an additional 2 minutes.
  6. Pour the gochujang mixture over the chicken, ensuring it’s well coated.
  7. Transfer the skillet to the preheated oven and roast for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  8. Broil for an additional 2–3 minutes for extra caramelization.
  9. Let the chicken rest for 5 minutes, then drizzle with sesame oil and garnish with green onions or sesame seeds before serving.

Notes

Substitute gochujang with sriracha for a milder heat. Use maple syrup instead of honey for a no-sugar option.
