- 4 bone-in, skin-on chicken thighs
- 1/4 cup gochujang
- 2 tablespoons honey
- 3 tablespoons soy sauce
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- Salt and black pepper, to taste
- 1 tablespoon vegetable oil
- Sliced green onions or sesame seeds, for garnish
Instructions
- Preheat your oven to 400°F (204°C).
- In a medium bowl, whisk together gochujang, honey, soy sauce, garlic, and ginger until smooth.
- Pat the chicken thighs dry and season with salt and black pepper.
- Heat a large, oven-safe skillet over medium-high heat with vegetable oil.
- Place the chicken skin-side down in the skillet for 5–7 minutes until golden brown, then flip and sear for an additional 2 minutes.
- Pour the gochujang mixture over the chicken, ensuring it’s well coated.
- Transfer the skillet to the preheated oven and roast for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Broil for an additional 2–3 minutes for extra caramelization.
- Let the chicken rest for 5 minutes, then drizzle with sesame oil and garnish with green onions or sesame seeds before serving.
Notes
Substitute gochujang with sriracha for a milder heat. Use maple syrup instead of honey for a no-sugar option.
