  • 2 tablespoons Caribbean curry powder
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 2 carrots, sliced
  • 1 can coconut milk
  • 1 cup chicken broth
  • 2 sprigs fresh thyme
  • 2 scallions, chopped
  • Salt and pepper to taste
  • Oil for sautéing

Instructions

  1. Clean the chicken thoroughly and pat it dry. Season with salt, pepper, and curry powder, and let it sit for about 30 minutes.
  2. In a large skillet or Dutch oven, heat oil over medium heat and add the diced onion, minced garlic, and grated ginger. Sauté until fragrant and the onions are translucent.
  3. Increase the heat to medium-high and brown the seasoned chicken for about 5 minutes per side.
  4. Add the bell peppers and carrots. Pour in the coconut milk and chicken broth, scraping the bottom of the pan to lift any browned bits.
  5. Reduce the heat to low, add thyme and scallions, cover, and simmer for about 30-40 minutes, until the chicken is cooked through and tender.
  6. Taste and adjust seasoning as needed before serving.
  7. Serve over fluffy rice or with flatbread, enjoying the rich flavors together.

Notes
