- 2 lbs chicken thighs or drumsticks (bone-in, skin-on)
- 2 tablespoons Caribbean curry powder
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 onion, diced
- 1 bell pepper, chopped
- 2 carrots, sliced
- 1 can coconut milk
- 1 cup chicken broth
- 2 sprigs fresh thyme
- 2 scallions, chopped
- Salt and pepper to taste
- Oil for sautéing
Instructions
- Clean the chicken thoroughly and pat it dry. Season with salt, pepper, and curry powder, and let it sit for about 30 minutes.
- In a large skillet or Dutch oven, heat oil over medium heat and add the diced onion, minced garlic, and grated ginger. Sauté until fragrant and the onions are translucent.
- Increase the heat to medium-high and brown the seasoned chicken for about 5 minutes per side.
- Add the bell peppers and carrots. Pour in the coconut milk and chicken broth, scraping the bottom of the pan to lift any browned bits.
- Reduce the heat to low, add thyme and scallions, cover, and simmer for about 30-40 minutes, until the chicken is cooked through and tender.
- Taste and adjust seasoning as needed before serving.
- Serve over fluffy rice or with flatbread, enjoying the rich flavors together.
Notes
For a vegetarian option, substitute chicken with chickpeas or tofu. Marinating the chicken overnight is recommended for deeper flavor.
