Ingredients

  • Chicken (breast or thighs)
  • 1 tablespoon Jamaican curry powder
  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 teaspoon fresh thyme
  • 2 scallions, chopped
  • 1 Scotch bonnet pepper (optional)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Marinate chicken with Jamaican curry powder, minced garlic, grated ginger, and a splash of lemon juice for at least 30 minutes.
  2. In a skillet, heat vegetable oil over medium heat and sauté onions until translucent.
  3. Add marinated chicken and cook until browned on all sides.
  4. Stir in bell peppers, thyme, and scallions; sauté for a few minutes.
  5. Pour in coconut milk and enough water to cover chicken; bring to a simmer.
  6. Lower heat and cook for 30-40 minutes until chicken is tender and sauce thickens.
  7. Add Scotch bonnet pepper during the last 10 minutes, adjust heat to taste.
  8. Season with salt and pepper and serve hot over rice or with naan.

Notes

For a richer consistency, use coconut cream instead of coconut milk. Adjust spice levels to your liking by altering or omitting the Scotch bonnet.
