- Chicken (breast or thighs)
- 1 tablespoon Jamaican curry powder
- 1 cup coconut milk
- 2 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 teaspoon fresh thyme
- 2 scallions, chopped
- 1 Scotch bonnet pepper (optional)
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Marinate chicken with Jamaican curry powder, minced garlic, grated ginger, and a splash of lemon juice for at least 30 minutes.
- In a skillet, heat vegetable oil over medium heat and sauté onions until translucent.
- Add marinated chicken and cook until browned on all sides.
- Stir in bell peppers, thyme, and scallions; sauté for a few minutes.
- Pour in coconut milk and enough water to cover chicken; bring to a simmer.
- Lower heat and cook for 30-40 minutes until chicken is tender and sauce thickens.
- Add Scotch bonnet pepper during the last 10 minutes, adjust heat to taste.
- Season with salt and pepper and serve hot over rice or with naan.
Notes
For a richer consistency, use coconut cream instead of coconut milk. Adjust spice levels to your liking by altering or omitting the Scotch bonnet.
