Ingredients

  • 1 pound shrimp, peeled and deveined
  • 23 large eggs
  • 1 ripe avocado
  • 2 slices ciabatta or sourdough bread
  • 1 tablespoon butter or olive oil
  • Salt and pepper to taste
  • Fresh dill or cilantro for garnish

Instructions

  1. In a skillet over medium heat, melt butter or heat olive oil. Add shrimp and sauté for 2-3 minutes until pink and opaque; remove from heat.
  2. Whisk eggs in a bowl with salt and pepper. Add to the skillet and scramble until fluffy, about 2-3 minutes. Remove from heat.
  3. Slice the avocado, mash it in a bowl, and season with salt and a squeeze of lime.
  4. Toast the bread until crispy.
  5. Spread mashed avocado on one slice, layer with shrimp, followed by scrambled eggs and fresh herbs. Top with the second slice of bread.
  6. Cut in half and serve immediately, optionally with fresh fruit or salad.
