Ingredients

- 4 cups fresh spinach (or 2 cups frozen spinach)
- 1 avocado or 1 cup thick cashew cream
- 2 cloves garlic, minced
- 1 onion, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh chives, chopped
- 4 cups vegetable broth
- Juice of 1 lemon or lime
- Salt and pepper to taste
Instructions
- Sauté onions and garlic in a large pot over medium heat until soft and fragrant.
- Add fresh spinach and cook until wilted (or heat through if using frozen).
- Combine vegetable broth and cream of choice, blending together.
- Let simmer gently then toss in herbs and lemon juice, adjusting seasoning with salt and pepper.
- Blend until creamy using an immersion blender until velvety smooth.
- Serve warm, topping with more cream, croutons, or seeds if desired.
