- 8 strips thick-cut bacon
- 1 pound lean ground beef
- 1 cup long-grain or jasmine rice
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup cheddar cheese, shredded
- 2 cups beef broth
- Salt, pepper, and smoked paprika to taste
Instructions
- In a large skillet over medium heat, cook sliced bacon until crispy. Remove and set aside on paper towels.
- In the bacon grease, add diced onions and sauté until translucent, about 5-7 minutes. Stir in minced garlic and cook for another 1-2 minutes.
- Add ground beef to the skillet, cooking until browned and breaking it up with a spatula. Season with salt, pepper, and smoked paprika.
- Stir in uncooked rice, diced tomatoes, and beef broth. Bring to a boil, then reduce to a simmer. Cover and cook for 18-20 minutes until rice is tender and liquid is absorbed.
- Remove from heat, stir in crispy bacon and top with shredded cheddar cheese. Cover until cheese is melted.
- Fluff rice with a fork, mix gently, and serve warm.

Feel free to customize by adding vegetables like bell peppers or swapping beef for ground turkey. Adjust seasonings according to taste.
