  • 8 strips thick-cut bacon
  • 1 pound lean ground beef
  • 1 cup long-grain or jasmine rice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup cheddar cheese, shredded
  • 2 cups beef broth
  • Salt, pepper, and smoked paprika to taste

Instructions

  1. In a large skillet over medium heat, cook sliced bacon until crispy. Remove and set aside on paper towels.
  2. In the bacon grease, add diced onions and sauté until translucent, about 5-7 minutes. Stir in minced garlic and cook for another 1-2 minutes.
  3. Add ground beef to the skillet, cooking until browned and breaking it up with a spatula. Season with salt, pepper, and smoked paprika.
  4. Stir in uncooked rice, diced tomatoes, and beef broth. Bring to a boil, then reduce to a simmer. Cover and cook for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Remove from heat, stir in crispy bacon and top with shredded cheddar cheese. Cover until cheese is melted.
  6. Fluff rice with a fork, mix gently, and serve warm.
