Deliciously crispy quesadillas filled with bacon, scrambled eggs, and gooey cheese, perfect for brunch or any meal of the day.
Ingredients

- 4 slices thick-cut bacon
- 4 large eggs
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 flour tortillas
- 2 tbsp butter or oil
- Optional add-ins: sautéed vegetables, herbs, hot sauce
Instructions
- In a large skillet, cook the bacon over medium heat until crispy. Remove and let drain on paper towels.
- In a bowl, whisk the eggs with a pinch of salt and pepper. Pour into the same skillet over low heat, stirring gently until just set.
- On one half of a tortilla, layer crispy bacon, scrambled eggs, and a handful of cheese. Fold the tortilla in half.
- Wipe the skillet and add butter or oil. Cook the quesadilla over medium heat for 2-3 minutes on each side until golden and cheese melts.
- Remove, cool for a minute, then cut into wedges. Serve with salsa or sour cream.
Notes
For an extra crispy tortilla, use more butter or oil. Allow the eggs to finish cooking off heat to avoid rubberiness.
