- 12 Medjool dates
- 4 oz goat cheese
- 12 slices thick-cut bacon
- 2 tbsp high-quality honey
- Optional herbs (thyme or rosemary)
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice one side of each Medjool date and remove the pit.
- Spoon about a teaspoon of goat cheese into each date.
- Wrap each stuffed date with a half slice of bacon, securing with a toothpick if necessary.
- Place the wrapped dates on a baking tray lined with parchment paper.
- Bake for 20-25 minutes, or until the bacon is crispy and the cheese is bubbly.
- Drizzle with honey before serving warm.
Notes
For an added kick, consider mixing crushed red pepper flakes with the goat cheese. These are best enjoyed fresh from the oven.
