- 1 cup fresh cranberries
- 1 cup pomegranate juice
- 1/4 cup honey or maple syrup
- 2 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped

- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and prepare a roasting pan by lightly greasing it with olive oil or non-stick spray.
- In a bowl, combine the pomegranate juice, fresh cranberries, honey, minced garlic, chopped herbs, and a good pinch of salt and pepper to make the marinade.
- Place the turkey wings into a resealable bag or a bowl and pour the marinade over them. Ensure every wing is well coated. Marinate in the fridge for at least 1 hour, or overnight for the best flavor infusion.
- Arrange the turkey wings in a single layer in your prepared roasting pan. Pour any leftover marinade over the top.
- Roast in the preheated oven for about 1 hour, basting every 20 minutes with pan juices to keep them moist and flavorful.
- For a crispy skin, broil the wings for an additional 3-5 minutes after baking, keeping a close eye to avoid burning.
- Let the wings rest for a few minutes, then sprinkle with fresh pomegranate seeds and serve hot.
Notes
For a smaller gathering, feel free to use chicken wings instead of turkey. Adjust sweetness by varying the amount of honey or syrup.
