- 1 cup orzo
- 8 oz feta cheese
- 4 cups fresh spinach
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp crushed red pepper (optional)
- 2 cups vegetable or chicken broth
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the orzo in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1-2 minutes. Add spinach and cook until wilted.
- In a mixing bowl, combine cooked orzo, sautéed spinach, crumbled feta, herbs, and a generous splash of broth. Mix well.
- Transfer the mixture to a baking dish and bake for 20-25 minutes, until the feta is bubbling and golden.
- Let it cool for a few minutes, then finish with a drizzle of olive oil and a squeeze of lemon juice before serving.
Notes
For a creamier texture, add more broth during mixing. Pair with grilled chicken or a light salad.
