Description

Delightfully fluffy baked donuts filled with colorful funfetti sprinkles and a protein boost.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1 tsp baking powder
  • 1/2 cup granulated sugar
  • 2 large eggs (or flax eggs for vegan)
  • 1/2 cup milk (whole, almond, or your preference)
  • 1 tsp vanilla extract
  • 1/4 cup butter (melted, or coconut oil for dairy-free)
  • 1/4 cup funfetti sprinkles (plus more for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease your donut pan with cooking spray or butter.
  3. In a medium bowl, whisk together flour, protein powder, baking powder, and sugar.
  4. In a separate bowl, whisk together eggs, milk, melted butter, and vanilla extract.
  5. Gradually pour the wet mixture into the dry ingredients, folding gently until just combined.
  6. Fold in the sprinkles, saving some for topping.
  7. Fill each cavity of the donut pan about 2/3 full using a piping bag.
  8. Bake for 10-12 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for 5 minutes, then transfer to a cooling rack and top with more sprinkles.

Notes

Experiment with flavors by adding almond extract or citrus zest. For glazing, mix powdered sugar with milk and vanilla.
