- 8 oz fresh goat cheese
- 2 cups vine-ripened tomatoes, diced
- 1/4 cup fresh basil, chopped
- 3 cloves garlic, roasted
- 2 tbsp olive oil
- 1 baguette, sliced
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, mix diced tomatoes, minced roasted garlic, chopped basil, and olive oil. Season with salt and pepper.
- In a baking dish, layer the goat cheese at the bottom and top with the tomato mixture.
- Bake for about 20-25 minutes, or until bubbly and golden.
- While baking, slice and toast the baguette on a baking sheet for 5-7 minutes, drizzled with olive oil.
- Serve the dip warm with toasted baguette slices.
Notes
You can substitute goat cheese with cream cheese or feta, and use cherry tomatoes instead of regular ones.
