Ingredients

Scale
  • 8 oz fresh goat cheese
  • 2 cups vine-ripened tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, roasted
  • 2 tbsp olive oil
  • 1 baguette, sliced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, mix diced tomatoes, minced roasted garlic, chopped basil, and olive oil. Season with salt and pepper.
  3. In a baking dish, layer the goat cheese at the bottom and top with the tomato mixture.
  4. Bake for about 20-25 minutes, or until bubbly and golden.
  5. While baking, slice and toast the baguette on a baking sheet for 5-7 minutes, drizzled with olive oil.
  6. Serve the dip warm with toasted baguette slices.

Notes

You can substitute goat cheese with cream cheese or feta, and use cherry tomatoes instead of regular ones.
