A comforting dish of hearty farro baked with sautéed mushrooms and fragrant thyme.
Ingredients

- 1 cup farro
- 2 cups vegetable broth
- 1 cup cremini or shiitake mushrooms, chopped
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons butter or olive oil
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, melt the butter or heat the olive oil over medium heat. Add the chopped onions and minced garlic, cooking until softened.
- Add the chopped mushrooms and a pinch of salt, sautéing until they release their liquid and turn golden, about 8 minutes.
- In a large mixing bowl, combine the sautéed mixture with farro, broth, and thyme. Stir to combine.
- Transfer the mixture to a baking dish and cover tightly with aluminum foil. Bake for 30-35 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the top to crisp up.
- Let cool for a few minutes before serving. Optionally top with parmesan or fresh thyme.
Notes
Soak the farro in warm water for an hour before cooking to reduce cooking time and enhance flavor absorption.
