Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish.
- Heat olive oil in a skillet over medium heat; sauté garlic and onions until soft and fragrant.
- Add sliced mushrooms and cook until golden brown, about 5-7 minutes.
- Stir in the farro and toast for 2 minutes.
- Mix in thyme, salt, and pepper before adding vegetable broth; bring to a gentle boil.
- Remove from heat, transfer to baking dish, cover with foil, and bake for 30-35 minutes.
- If a crispy top is desired, uncover and bake for an additional 10 minutes.
