Description

Soft, fluffy muffins filled with crushed Oreos that evoke memories and bring loved ones together.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 1 cup crushed Oreo cookies
  • Optional: 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or grease it lightly.
  3. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, whisk together the eggs, milk, and vegetable oil until fully combined. Add a splash of vanilla extract if desired.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Fold in the crushed Oreos.
  7. Fill each muffin cup about three-quarters full.
  8. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For a nuttier flavor, substitute all-purpose flour with whole wheat flour. You can also replace vegetable oil with melted butter for a richer taste.
