- 2 ripe bananas, mashed
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup heavy cream
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper, greasing it well.
- In a large mixing bowl, mash the ripe bananas until smooth. Mix in sugar and eggs until well combined.
- Stir in the vanilla extract, followed by the dry ingredients. Gently fold in the flour and baking powder.
- Spread the batter evenly onto the prepared baking sheet.
- Bake for approximately 15 minutes or until the cake springs back to the touch.
- Remove from the oven and let it cool for about 10 minutes.
- Invert the cake onto a sugared parchment paper and roll it up from one short end. Let it cool in this roll for around 30 minutes.
- Beat the cream cheese until smooth, blending in the heavy cream and adding powdered sugar until creamy.
- After the cake has cooled, unroll it gently and spread the cream cheese filling across the surface.
- Tightly roll the cake back up and wrap it in plastic wrap. Refrigerate for at least an hour.
- Before serving, dust with powdered sugar and cut into slices.
Notes
You can use frozen bananas that have been thawed if you don’t have ripe bananas. For gluten-free options, consider almond or coconut flour.
