Description

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper, greasing it well.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Mix in sugar and eggs until well combined.
  3. Stir in the vanilla extract, followed by the dry ingredients. Gently fold in the flour and baking powder.
  4. Spread the batter evenly onto the prepared baking sheet.
  5. Bake for approximately 15 minutes or until the cake springs back to the touch.
  6. Remove from the oven and let it cool for about 10 minutes.
  7. Invert the cake onto a sugared parchment paper and roll it up from one short end. Let it cool in this roll for around 30 minutes.
  8. Beat the cream cheese until smooth, blending in the heavy cream and adding powdered sugar until creamy.
  9. After the cake has cooled, unroll it gently and spread the cream cheese filling across the surface.
  10. Tightly roll the cake back up and wrap it in plastic wrap. Refrigerate for at least an hour.
  11. Before serving, dust with powdered sugar and cut into slices.

Notes

You can use frozen bananas that have been thawed if you don’t have ripe bananas. For gluten-free options, consider almond or coconut flour.
