  • 1 ½ cups all-purpose flour (or whole wheat flour)
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup unsalted butter (or vegetable oil)
  • 1 cup semi-sweet chocolate chips
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with non-stick spray or muffin liners.
  2. Mash the ripe bananas in a large bowl until smooth, with some lumps if desired.
  3. In another bowl, whisk together the dry ingredients: flour, sugars, baking powder, baking soda, and salt.
  4. In a separate bowl, combine the wet ingredients: mashed bananas, melted butter (or oil), eggs, and vanilla extract. Stir until blended.
  5. Gently incorporate the dry ingredients into the wet mixture until just combined.
  6. Fold in the chocolate chips evenly throughout the batter.
  7. Spoon the batter into the prepared muffin tin, filling each compartment about two-thirds full.
  8. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.

Notes

Can substitute eggs with flax eggs for a vegan version. Baking time may vary based on oven efficiency.
