- 3 ripe bananas
- 1 ½ cups all-purpose flour (or whole wheat flour)
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 2 large eggs
- ½ cup unsalted butter (or vegetable oil)
- 1 cup semi-sweet chocolate chips
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with non-stick spray or muffin liners.
- Mash the ripe bananas in a large bowl until smooth, with some lumps if desired.
- In another bowl, whisk together the dry ingredients: flour, sugars, baking powder, baking soda, and salt.
- In a separate bowl, combine the wet ingredients: mashed bananas, melted butter (or oil), eggs, and vanilla extract. Stir until blended.
- Gently incorporate the dry ingredients into the wet mixture until just combined.
- Fold in the chocolate chips evenly throughout the batter.
- Spoon the batter into the prepared muffin tin, filling each compartment about two-thirds full.
- Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
Notes
Can substitute eggs with flax eggs for a vegan version. Baking time may vary based on oven efficiency.
