Ingredients
- Salmon fillets
- Panko breadcrumbs
- Mayonnaise
- Sweet chili sauce
- Sriracha
- Bell peppers
- Cucumbers
- Snap peas
- Fresh cilantro or green onions
- Rice or quinoa
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the salmon into bite-sized pieces, pat them dry, and season lightly with salt and pepper.
- Set up a breading station with one bowl of beaten egg and another with panko mixed with paprika and garlic powder. Dip each salmon piece in egg, then roll in panko.
- Place the coated salmon on a lined baking sheet. Bake for 15-20 minutes until golden brown and tender.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha. Adjust seasoning to taste.
- While the salmon bakes, prepare your bowls with cooked rice or quinoa, topped with baked salmon, fresh veggies, and a drizzle of bang bang sauce. Garnish with fresh herbs.
- Serve immediately while the salmon is still crispy.
Notes
For a lighter sauce, blend mayonnaise with yogurt. Serve with pickled veggies for an added tangy element.
