Description

Ingredients

  • Salmon fillets
  • Panko breadcrumbs
  • Mayonnaise
  • Sweet chili sauce
  • Sriracha
  • Bell peppers
  • Cucumbers
  • Snap peas
  • Fresh cilantro or green onions
  • Rice or quinoa

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the salmon into bite-sized pieces, pat them dry, and season lightly with salt and pepper.
  3. Set up a breading station with one bowl of beaten egg and another with panko mixed with paprika and garlic powder. Dip each salmon piece in egg, then roll in panko.
  4. Place the coated salmon on a lined baking sheet. Bake for 15-20 minutes until golden brown and tender.
  5. In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha. Adjust seasoning to taste.
  6. While the salmon bakes, prepare your bowls with cooked rice or quinoa, topped with baked salmon, fresh veggies, and a drizzle of bang bang sauce. Garnish with fresh herbs.
  7. Serve immediately while the salmon is still crispy.

Notes

For a lighter sauce, blend mayonnaise with yogurt. Serve with pickled veggies for an added tangy element.
