- 1 cup BBQ sauce (homemade or store-bought)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 bell pepper, sliced
- 1 onion, sliced
- Cilantro, for garnish
- Oil or butter, for cooking
Instructions
- Prepare the Ingredients: If using raw chicken, season it with salt and pepper, and cook it in a skillet over medium heat until golden and fully cooked. Shred the chicken and combine it with your chosen BBQ sauce in a bowl.
- Prepare the Veggies: Sauté finely chopped onions and bell peppers in a touch of oil until they’re soft and fragrant.
- Assemble the Quesadilla: On one half of a tortilla, layer shredded BBQ chicken, sautéed onions, bell peppers, and a generous sprinkle of cheese. Fold the tortilla in half.
- Cook Until Crispy: Heat a skillet over medium heat and lightly grease it with oil or butter. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side.
- Slice and Serve: Remove from heat and let rest for a minute. Slice into wedges and serve with salsa, sour cream, or guacamole.
Notes
For extra crispiness, avoid overcrowding the skillet and cook in batches. You can also customize the filling with different cheeses or add spices.
