Description

A comforting and flavorful dish combining tender pulled pork with flaky empanada dough, perfect for gatherings and family traditions.

Ingredients

Scale
  • 2 lbs pulled pork shoulder, slow-cooked
  • 1 cup BBQ sauce
  • 2 cups empanada dough (homemade or store-bought)
  • 1 cup sautéed onions
  • 2 cloves garlic, minced
  • 1 cup cheese (optional, e.g. cheddar or pepper jack)
  • Fresh herbs (cilantro, green onions, or parsley, for garnish)

Instructions

  1. Prepare the Pulled Pork: Slow cook pork shoulder with salt, pepper, and BBQ sauce on low for about 8 hours until fork-tender. Shred pork and mix with additional BBQ sauce to taste.
  2. Make the Dough: Combine flour and salt, add cold water to form dough. Knead, wrap, and let rest.
  3. Prep the Filling: Sauté onions and garlic until translucent. Mix shredded pork, sautéed onions, and cheese.
  4. Assemble Empanadas: Roll dough, cut into circles, and fill each with a tablespoon of the pork mixture, sealing edges.
  5. Cook Empanadas: Bake at 375°F (190°C) for 20-25 minutes or fry until golden brown.
  6. Serve and Enjoy: Cool slightly and serve with tangy coleslaw or salad.

Notes

Try adding sautéed mushrooms for extra flavor or using different protein substitutes based on preference.
