- 8 oz egg noodles
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup chicken broth
- 1 cup mixed vegetables (carrots, bell peppers, snap peas)
- 3 tbsp soy sauce
- Fresh parsley or green onions for garnish
Instructions
- Slice the beef into thin strips against the grain and prepare vegetables.
- In a large skillet, heat 1 tbsp of oil over medium-high heat. Sauté the onions and garlic until fragrant (2-3 minutes).
- Add the sliced beef and sear for 2-4 minutes until browned but not fully cooked.
- Pour in the beef broth, soy sauce, and toss in the chopped vegetables. Bring to a gentle boil, then reduce to a simmer.
- In a separate pot, boil water and cook the egg noodles according to package instructions (5-7 minutes). Drain.
- Once the beef is cooked through, add the cooked noodles to the skillet and toss everything together.
- Garnish with fresh herbs and serve hot.
Notes
For a vegetarian option, substitute beef with mushrooms and tofu. Use zucchini noodles instead of egg noodles for a healthier alternative.
