A nostalgic and comforting dish featuring tender beef and al dente egg noodles in a rich sauce.
Ingredients

- 1.5 lbs beef (chuck roast or flank steak)
- 8 oz egg noodles
- 4 cups beef or vegetable broth
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 cups fresh vegetables (mushrooms, bell peppers, or carrots)
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- 2 tbsp soy sauce
- 2 tbsp Worcestershire sauce
- 1 tbsp cornstarch
- Salt and pepper to taste
Instructions
- Slice the beef against the grain for tenderness and chop the vegetables.
- In a skillet, heat olive oil over medium-high heat and sear the beef until browned on all sides.
- Remove beef and sauté onions and garlic in the same pan until translucent.
- Return beef to the skillet and add broth, soy sauce, and Worcestershire sauce. Simmer for 1 to 1.5 hours until beef is tender.
- Cook egg noodles according to package instructions until al dente, then drain.
- If desired, thicken sauce by mixing cornstarch with water and adding to the skillet.
- Add cooked noodles to the skillet and toss to combine. Top with fresh herbs before serving.
- Taste and adjust seasoning as necessary before serving.
Notes
This dish can be made with ground turkey or tofu for a lighter option. Zucchini noodles can be used as a substitute for egg noodles.
