- 1 pound thinly sliced sirloin or flank steak
- 8 ounces fettuccine pasta
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package directions. Reserve some pasta water before draining.
- In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the beef strips in a single layer and sear until browned, about 3-4 minutes. Remove and set aside.
- In the same skillet, add more oil if needed and sauté the onions and bell peppers until tender, about 5-7 minutes.
- Stir in minced garlic and cook for about a minute. Return the beef to the skillet along with the drained pasta.
- Pour in the reserved pasta water and the beef broth. Toss everything together and season with salt and pepper.
- Top with fresh Parmesan cheese before serving warm.
