Ingredients

  • 1 pound thinly sliced sirloin or flank steak
  • 8 ounces fettuccine pasta
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions. Reserve some pasta water before draining.
  2. In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the beef strips in a single layer and sear until browned, about 3-4 minutes. Remove and set aside.
  3. In the same skillet, add more oil if needed and sauté the onions and bell peppers until tender, about 5-7 minutes.
  4. Stir in minced garlic and cook for about a minute. Return the beef to the skillet along with the drained pasta.
  5. Pour in the reserved pasta water and the beef broth. Toss everything together and season with salt and pepper.
  6. Top with fresh Parmesan cheese before serving warm.
