- 2 fresh bell peppers (any color, diced)
- 8 oz pasta (fusilli or penne)
- 3 cloves garlic (minced)
- 1 onion (diced)
- 1 cup tomato sauce
- 2 tbsp olive oil
- Fresh basil and parsley (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic, stirring until the onion turns soft and translucent.
- Introduce ground beef, breaking it apart, and cook until browned.
- Meanwhile, boil the pasta according to package instructions until al dente. Reserve some pasta water.
- Add bell peppers to the skillet, sautéing until softened.
- Stir in tomato sauce and let it simmer for a few minutes.
- Drain pasta and add to the skillet, mixing everything together and adding reserved pasta water as needed.
- Garnish with fresh herbs and serve hot.
Notes
For a lighter option, substitute ground beef with turkey or a vegetarian meat substitute. Feel free to add diced zucchini for extra veggies.
