- 1 bunch scallions, chopped
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 1 cup bell peppers, sliced
- 1 cup snap peas
- Salt and pepper to taste
- 2 cups cooked rice or noodles, for serving
Instructions
- Prep Your Ingredients: Start by slicing the beef against the grain into thin strips. Chop the scallions and any other vegetables you’d like to incorporate.
- Marinate the Beef: In a bowl, combine the sliced beef with a bit of soy sauce, garlic, and sesame oil. Let it marinate for about 15 minutes while you prep the rest.
- Heat the Skillet: Preheat your skillet over high heat and add a splash of oil. If the oil starts to shimmer, it’s time to add the beef in a single layer.
- Cook the Beef: Sear the beef for about 2-3 minutes until it develops a nice brown crust. Remove it from the skillet and set aside.
- Stir-Fry the Veggies: Add more oil if needed, and toss in your vegetables, starting with those that take longer to cook first, like bell peppers, followed by the scallions towards the end.
- Combine Everything: Return the beef to the skillet, add the remaining marinade, and toss everything together. Cook for another minute until the sauce thickens slightly.
- Serve and Enjoy: Serve it over rice or noodles, and enjoy with a sprinkle of sesame seeds.
