Scale
- 1 Beef Tenderloin (about 2 lbs)
- 2 tablespoons Olive oil
- 3–4 Garlic cloves, smashed
- Fresh herbs (Rosemary, Thyme)
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons Butter
Instructions
- Prep the Meat: Let the Beef Tenderloin come to room temperature, pat it dry, and season generously with salt and pepper.
- Heat the Skillet: In a heavy skillet, heat olive oil over medium-high heat until shimmering.
- Sear the Beef: Place the Beef Tenderloin in the hot skillet and sear on all sides for about 3-4 minutes.
- Add Garlic and Herbs: Midway through cooking, add the smashed garlic and fresh herbs to the skillet.
- Baste with Butter: When the desired internal temperature (120°F for medium-rare) is reached, add butter and baste the meat.
- Rest the Meat: Remove from skillet, cover with foil, and let it rest for 10-15 minutes.
- Slice and Serve: Slice against the grain into thick rounds and serve garnished with sautéed garlic and herbs.
Notes
Allowing the meat to rest is crucial for juicy beef! Use a meat thermometer for perfect doneness.
