Description

A delightful twist on classic crème brûlée featuring fresh strawberries, blueberries, and raspberries, creating a delicious blend of creamy custard and vibrant flavors.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 cups heavy cream
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 6 egg yolks

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Wash and dry the berries, then scatter them evenly in a baking dish.
  3. In a saucepan, combine the heavy cream, half of the granulated sugar, and half of the vanilla extract over medium heat until warm.
  4. In a bowl, whisk the egg yolks with the remaining sugar until pale, then slowly mix in the warm cream to temper the eggs.
  5. Return the mixture to the saucepan and cook over low heat until slightly thickened, then cool briefly.
  6. Pour the custard mixture over the berries.
  7. Place the baking dish in a larger dish filled with hot water and bake for 30-35 minutes until set but slightly jiggly.
  8. Cool and chill in the refrigerator for at least 2 hours or overnight.
  9. Prior to serving, sprinkle granulated sugar on top and caramelize it with a kitchen torch or under a broiler.
  10. Let cool slightly, then serve and enjoy!

Notes

For a lighter version, substitute half-and-half for heavy cream. Use a thin layer of sugar for an ideal caramelized top.
