A delightful twist on classic crème brûlée featuring fresh strawberries, blueberries, and raspberries, creating a delicious blend of creamy custard and vibrant flavors.

- 2 cups fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 2 cups heavy cream
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 6 egg yolks
Instructions
- Preheat your oven to 325°F (163°C).
- Wash and dry the berries, then scatter them evenly in a baking dish.
- In a saucepan, combine the heavy cream, half of the granulated sugar, and half of the vanilla extract over medium heat until warm.
- In a bowl, whisk the egg yolks with the remaining sugar until pale, then slowly mix in the warm cream to temper the eggs.
- Return the mixture to the saucepan and cook over low heat until slightly thickened, then cool briefly.
- Pour the custard mixture over the berries.
- Place the baking dish in a larger dish filled with hot water and bake for 30-35 minutes until set but slightly jiggly.
- Cool and chill in the refrigerator for at least 2 hours or overnight.
- Prior to serving, sprinkle granulated sugar on top and caramelize it with a kitchen torch or under a broiler.
- Let cool slightly, then serve and enjoy!
Notes
For a lighter version, substitute half-and-half for heavy cream. Use a thin layer of sugar for an ideal caramelized top.
