Description

Delightful and refreshing Berry Ice Cream Bars made with fresh berries and a creamy base, perfect for summer afternoons.

Ingredients

Scale
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup cream or coconut milk
  • 1/4 cup sweetener (honey, maple syrup, or agave syrup)
  • 1 tablespoon lemon juice
  • Optional add-ins: chopped mint, yogurt, vanilla extract

Instructions

  1. Prepare the Berries: Wash your berries gently and chop them if necessary.
  2. Blend the Mixture: In a blender, combine your berries, cream (or coconut milk), sweetener, and lemon juice. Blend until smooth, or pulse for some berry chunks.
  3. Taste and Adjust: Sample the mixture and adjust sweetness or lemon juice as needed.
  4. Pour and Freeze: Pour the mixture into molds or a small baking dish, inserting sticks after slightly frozen.
  5. Freeze Until Solid: Let them freeze for at least 4–6 hours, or overnight.
  6. Serve and Enjoy: Run molds under warm water to loosen before serving.

Notes

Experiment with textures by blending some berries finely while leaving others chunky. Ensure molds are sealed well to prevent freezer burn.
