- 1 whole Beef Tenderloin
- 2 cups Fresh Mushrooms (button, cremini, or shiitake)
- 4 cloves Fresh Garlic, minced
- 2 tbsp Fresh Thyme, chopped
- 2 tbsp Fresh Rosemary, chopped
- 1 cup Goat Cheese
- 2 cups Fresh Spinach
- 2 tbsp Olive Oil
- 1 tbsp Butter
- Salt and Pepper, to taste
Instructions
- Trim any silverskin and excess fat from the tenderloin, pat dry, and season with salt and pepper. Make a pocket in the center without cutting all the way through.
- In a skillet, melt butter with olive oil, add garlic, and sauté for about a minute.
- Add chopped mushrooms and cook for 5-7 minutes until browned. Stir in spinach and season with salt, pepper, and herbs.
- Remove from heat, let cool slightly, then fold in goat cheese.
- Stuff the tenderloin with the mushroom mixture and tie ends with kitchen twine.
- Heat more oil in the skillet, sear the tenderloin on all sides for about 3-4 minutes until browned.
- Preheat oven to 400°F (200°C) and roast tenderloin until it reaches the desired doneness (about 125°F for medium-rare).
- Let it rest for 10-15 minutes before slicing and serving.
Notes
Using a meat thermometer ensures perfect doneness. Feel free to customize stuffing ingredients based on seasonal availability.
