Ingredients

  • 1 whole Beef Tenderloin
  • 2 cups Fresh Mushrooms (button, cremini, or shiitake)
  • 4 cloves Fresh Garlic, minced
  • 2 tbsp Fresh Thyme, chopped
  • 2 tbsp Fresh Rosemary, chopped
  • 1 cup Goat Cheese
  • 2 cups Fresh Spinach
  • 2 tbsp Olive Oil
  • 1 tbsp Butter
  • Salt and Pepper, to taste

Instructions

  1. Trim any silverskin and excess fat from the tenderloin, pat dry, and season with salt and pepper. Make a pocket in the center without cutting all the way through.
  2. In a skillet, melt butter with olive oil, add garlic, and sauté for about a minute.
  3. Add chopped mushrooms and cook for 5-7 minutes until browned. Stir in spinach and season with salt, pepper, and herbs.
  4. Remove from heat, let cool slightly, then fold in goat cheese.
  5. Stuff the tenderloin with the mushroom mixture and tie ends with kitchen twine.
  6. Heat more oil in the skillet, sear the tenderloin on all sides for about 3-4 minutes until browned.
  7. Preheat oven to 400°F (200°C) and roast tenderloin until it reaches the desired doneness (about 125°F for medium-rare).
  8. Let it rest for 10-15 minutes before slicing and serving.
