  • 1 Beef Tenderloin (filet mignon or center-cut, quality cut)
  • 8 oz Portobello mushrooms, chopped
  • 8 oz Shiitake mushrooms, chopped
  • 4 cloves Garlic, minced
  • 1/4 cup Fresh parsley, chopped
  • 1 tsp Fresh thyme, chopped
  • 1 tsp Fresh rosemary, chopped
  • 8 oz Cream cheese
  • 1 cup Breadcrumbs (panko or homemade)
  • 1/2 cup Red wine (optional)
  • Olive oil for cooking

Instructions

  1. Trim excess fat from the beef and slice the tenderloin horizontally, creating a pocket for stuffing.
  2. In a skillet over medium heat, add olive oil, sauté chopped mushrooms and minced garlic until soft (about 5-7 minutes). Stir in fresh herbs.
  3. Transfer the mushroom mixture to a bowl and let cool. Once cooled, mix in cream cheese and breadcrumbs until combined.
  4. Stuff the beef pocket with the mushroom stuffing, pressing it in gently.
  5. Heat more olive oil in the skillet over high heat and sear the stuffed tenderloin on all sides until browned (about 3-4 minutes each side).
  6. Transfer the beef to a preheated oven at 375°F and roast until the internal temperature reaches 130°F for medium-rare (around 25-30 minutes). Rest for 10 minutes before slicing.

Notes

Use a meat thermometer to avoid overcooking. Serve with roasted vegetables or garlic mashed potatoes.
