- 1 Beef Tenderloin (filet mignon or center-cut, quality cut)
- 8 oz Portobello mushrooms, chopped
- 8 oz Shiitake mushrooms, chopped
- 4 cloves Garlic, minced
- 1/4 cup Fresh parsley, chopped
- 1 tsp Fresh thyme, chopped
- 1 tsp Fresh rosemary, chopped
- 8 oz Cream cheese
- 1 cup Breadcrumbs (panko or homemade)
- 1/2 cup Red wine (optional)
- Olive oil for cooking
Instructions
- Trim excess fat from the beef and slice the tenderloin horizontally, creating a pocket for stuffing.
- In a skillet over medium heat, add olive oil, sauté chopped mushrooms and minced garlic until soft (about 5-7 minutes). Stir in fresh herbs.
- Transfer the mushroom mixture to a bowl and let cool. Once cooled, mix in cream cheese and breadcrumbs until combined.
- Stuff the beef pocket with the mushroom stuffing, pressing it in gently.
- Heat more olive oil in the skillet over high heat and sear the stuffed tenderloin on all sides until browned (about 3-4 minutes each side).
- Transfer the beef to a preheated oven at 375°F and roast until the internal temperature reaches 130°F for medium-rare (around 25-30 minutes). Rest for 10 minutes before slicing.
Notes
Use a meat thermometer to avoid overcooking. Serve with roasted vegetables or garlic mashed potatoes.
