Ingredients

  • 1 lb ground beef (80/20 mix)
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté chopped onions in olive oil until golden, then stir in minced garlic and set aside.
  3. In a large bowl, combine ground beef, ground pork, sautéed onions and garlic, breadcrumbs, milk, eggs, Worcestershire sauce, salt, and pepper.
  4. Mix gently until combined, then shape into a loaf and place in a baking dish or on a lined baking sheet.
  5. Mix ketchup and brown sugar for the glaze, then brush over the top of the meatloaf.
  6. Bake for 60-75 minutes until internal temperature reaches 160°F (70°C).
  7. Let rest for 10 minutes before slicing and serving.

Notes

Use higher-fat meat for moisture. Don’t skip resting the meatloaf before slicing for maximum juiciness.
