Ingredients

Scale
  • 1 box red velvet cake mix
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • Optional: Cream cheese frosting for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the red velvet cake mix and cocoa powder.
  3. In another bowl, whisk together the eggs, oil, and vanilla extract.
  4. Gradually fold the egg mixture into the dry ingredients until just combined.
  5. Using a cookie scoop, drop dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes until the edges are set but the centers are soft.
  7. Allow to cool on the baking sheet for a couple of minutes, then drizzle with cream cheese frosting if desired.

Notes

For a thicker cookie, chill the dough for about an hour before baking.
