- 2 large eggs
- ½ cup vegetable oil (or melted butter)
- 1 tablespoon cocoa powder
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the red velvet cake mix and cocoa powder.
- In another bowl, whisk together the eggs, oil, and vanilla extract.
- Gradually fold the egg mixture into the dry ingredients until just combined.
- Using a cookie scoop, drop dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are set but the centers are soft.
- Allow to cool on the baking sheet for a couple of minutes, then drizzle with cream cheese frosting if desired.
Notes
For a thicker cookie, chill the dough for about an hour before baking.
