- 1 can kidney beans (15 oz, drained and rinsed)
- 1 can corn (15 oz, drained)
- 1 onion, chopped

- 1 bell pepper, chopped
- 4 cups chicken or vegetable broth
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp smoked paprika
- Fresh cilantro, chopped
- 1 lime, juiced
- Tortilla chips, for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and bell peppers, sauté until soft (5-7 minutes). Stir in minced garlic and cook for another minute.
- Add ground meat to the pot, cooking until browned and no longer pink. Season with cumin, chili powder, and smoked paprika; cook for an additional minute.
- Stir in diced tomatoes (with juices), drained beans, corn, and broth. Bring to a gentle boil, then reduce heat and simmer for 20-30 minutes.
- Taste and adjust seasoning as needed; a squeeze of lime juice and salt can enhance flavors.
- Ladle soup into bowls and top with shredded cheese, sour cream, fresh cilantro, avocado, and crispy tortilla strips as desired.
Notes
