- 24 ladyfingers
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1 cup brewed espresso or strong coffee
- 1/2 cup sugar
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
Instructions
- Brew your espresso or coffee and let it cool slightly. Whip the heavy cream until soft peaks form and set aside.
- In another bowl, mix the mascarpone cheese with sugar and vanilla extract until smooth. Gently fold in the whipped cream.
- Dip each ladyfinger briefly in the coffee mixture, allowing them to absorb the liquid but not become soggy.
- Layer soaked ladyfingers in a serving dish, spoon half of the cream mixture over the top, and repeat with another layer of soaked ladyfingers followed by the remaining cream mixture.
- Cover and refrigerate for at least 240 minutes or overnight.
- Just before serving, dust the top with cocoa powder, slice, and serve.
Notes
For a vegan twist, substitute heavy cream with coconut cream. For non-coffee lovers, brewed chai tea can be used for soaking ladyfingers.
