Ingredients

  • 24 ladyfingers
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup brewed espresso or strong coffee
  • 1/2 cup sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  1. Brew your espresso or coffee and let it cool slightly. Whip the heavy cream until soft peaks form and set aside.
  2. In another bowl, mix the mascarpone cheese with sugar and vanilla extract until smooth. Gently fold in the whipped cream.
  3. Dip each ladyfinger briefly in the coffee mixture, allowing them to absorb the liquid but not become soggy.
  4. Layer soaked ladyfingers in a serving dish, spoon half of the cream mixture over the top, and repeat with another layer of soaked ladyfingers followed by the remaining cream mixture.
  5. Cover and refrigerate for at least 240 minutes or overnight.
  6. Just before serving, dust the top with cocoa powder, slice, and serve.

Notes

For a vegan twist, substitute heavy cream with coconut cream. For non-coffee lovers, brewed chai tea can be used for soaking ladyfingers.
