- 4 large Eggs
- 1 cup Granulated Sugar
- 1 cup All-Purpose Flour (or gluten-free baking mix)
- 1/3 cup Unsweetened Cocoa Powder
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 1 cup Cherries (fresh or jarred)
- 1 cup Heavy Whipping Cream
- 1/4 cup Powdered Sugar
Instructions
- Preheat your oven to 350°F (175°C) and prepare a jelly roll pan by lining it with parchment paper.
- In a large mixing bowl, beat the eggs and sugar until light and fluffy, about 5-7 minutes.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture until just combined.
- Spread the batter evenly into the prepared pan and bake for 12-15 minutes until it springs back when lightly touched.
- While the cake is warm, flip it onto a clean dish towel dusted with powdered sugar and roll it up tightly with the towel. Allow it to cool completely.
- Whip the heavy cream and add powdered sugar until stiff peaks form. Unroll the cooled cake, spread whipped cream, and layer cherries on top.
- Re-roll the cake without the towel and chill in the refrigerator for at least 30 minutes before slicing.
- Slice and serve, garnished with powdered sugar or chocolate shavings if desired.
Notes
Chill the cake roll to meld flavors and make slicing easier. Substitute cherries with raspberries or strawberries if needed.
