- 1 cup baby bella or shiitake mushrooms, finely chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 2 cloves garlic, minced
- 1/2 cup dried cherries or cranberries
- 4 ounces cream cheese, softened
- Salt and pepper to taste
- 2 tablespoons butter
- Oil for searing

Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the turkey breast to prepare for stuffing.
- In a skillet, melt butter and sauté mushrooms until golden brown, then add garlic and herbs.
- Mix the sautéed mushrooms with cream cheese and dried fruits.
- Spread the mixture over the turkey breast and roll it up tightly.
- Tie the roulade with kitchen twine to secure it.
- Sear the roulade in a skillet with oil until golden brown.
- Transfer to a baking dish and roast for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- Allow to rest for 10-15 minutes before slicing.
