  • 1 cup baby bella or shiitake mushrooms, finely chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 1/2 cup dried cherries or cranberries
  • 4 ounces cream cheese, softened
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Oil for searing
  • Kitchen twine for rolling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the turkey breast to prepare for stuffing.
  3. In a skillet, melt butter and sauté mushrooms until golden brown, then add garlic and herbs.
  4. Mix the sautéed mushrooms with cream cheese and dried fruits.
  5. Spread the mixture over the turkey breast and roll it up tightly.
  6. Tie the roulade with kitchen twine to secure it.
  7. Sear the roulade in a skillet with oil until golden brown.
  8. Transfer to a baking dish and roast for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  9. Allow to rest for 10-15 minutes before slicing.
